The Kylemore Recipe of the Month – July 2010
Kylemore Abbey Traditional Irish Brown Bread
Enjoy a little piece of Kylemore at home!

Ingredients
450g/1 lb/4 cups white flour
450g /1lb/4 cups wholemeal flour
2 tsp bread soda
2 tsp salt
55g/2 oz margarine
55g/2pz/3/4 cup wheat bran
30g/1oz wheat germ
55g/20z oatmeal
2 eggs
2 tabsp golden syrup
1 litre/1 ¾ pints/4 ½ cups buttermilk
Method
Sieve the white flour, wholemeal flour, bread soda and salt into a bowl.
Add to the bowl any wholemeal flour that has not gone through the sieve.
Rub in the margarine.
Add the bran wheat germ and oatmeal and mix well.
Beat the eggs, golden syrup and the buttermilk together, add the liquid to the dry ingredients and mix to a loose dough.
Put into two 900g/2 lb well greased loaf tins/pans and bake in a preheated warm oven 170c/325/gas 3 for 55 mins.

While the brown bread* is still a little warm from the oven spread butter and a generous lashing of Kylemore Abbey Raspberry Jam* - Delicious!
Savoury
Try Kylemore Abbey Apple and Mint Chutney* spread over slices of brown bread* with slices of Durrus Farmhouse Cheese* - Delectable!
